Gluten Free Strawberry Cake

Strawberry season is finally here and I'm starting it off with a gluten free and a refined sugar free layer cake.  I have family members who have real issues with gluten and I know many out there do as well.  This recipe is made using a gluten free baking mix and the addition of ground almonds, making this a truly moist cake with an airy  texture.  The sweetening agent in this cake is coconut nectar, it comes from the sap of the coconut tree (much like maple syrup).  Coconut nectar has the benefit of being a raw pure sweetener that retains it's nutritional value and it has a low glycemic index.  I used fresh cream and stabilized it with a little gelatine to frost this lovely cake with and as you can see, I got a little carried away with the strawberries...well after all, I've waited a whole year for strawberry season to get here!


Ingredients

Makes 2 8" layers
For the Cake: 
1 cup all purpose gluten free flour mix
1 cup almond meal
1 tablespoon baking powder
pinch of sea salt
4 tablespoon unrefined coconut oil, melted
2/3 cup coconut nectar, agave nectar can be substituted
3 eggs
2 teaspoon pure vanilla extract 
1 cup diced strawberries 

For the frosting: 
2 cups heavy cream, well chilled
2 teaspoons pure vanilla extract
1 teaspoon plain gelatine 

Optional...
extra strawberries for garnish
toasted sliced almonds for garnish

Preheat oven to 350° F
Grease 2- 8 inch cake pans and line the bottom with parchment paper
  







Sift the flour mix, almond meal
baking powder and sea salt onto 
a piece of parchment paper, sift
again into a large bowl. 

In a smaller bowl, whisk the eggs 
and add the melted coconut oil, 
coconut nectar and vanilla  Whisk 
to combine.















Combine with a spatula, the wet 
ingredients into the dry ingredients 
in three additions, folding carefully 
until completely combined

 






Divide the batter evenly between the two prepared cake pans and spread evenly with a spatula.  Sprinkle the diced strawberries over top of batter, dividing a 1/2 cup between each pan.  Press lightly into the batter with your fingers.  

Bake in the preheated oven for 18 to 20 minutes or until the middle of the cake is set and the cake pulls away from the side of the pan.  Remove from the oven and place pans on a wire rack to cool for 15 minutes.  Remove from pans and cool completely.

To make the frosting, in a small ramekin, measure 1 tablespoon of cold water, sprinkle gelatine over the water and allow gelatine to absorb into the water.  Heat carefully in a microwave for 10 seconds or until gelatine dissolves into a liquid.  In a mixing bowl fitted with a whisk attachment, add heavy cream and vanilla.  Whisk on medium speed until cream starts to thicken, then increase speed to high and continue whisking until medium peaks form.  Reduce speed to low and quickly add the liquid gelatine and whisk together until stiff peaks form. 

Fill and frost cake as desired.  I  Spread frosting on the bottom layer and added sliced strawberries than spread more frosting over the second layer and sandwiched the strawberries between the frosted layers.  I enrobed the entire cake with frosting and added rosettes to the edge and filled with strawberries.
I also applied toasted almonds to the base of the cake with a small offset spatula.  Enjoy!

Strawberries And Cream Puffs



Pâte A Choux or Cream Puff Paste is used to make èclairs, cream puffs and profiteroles.  It's one of the easiest pastries to make and the end result is a light and tender crust with an interior that is soft, eggy with an almost custardy perfection!  Fillings can range from ice cream, pastry cream or a creamy seafood stew.  I filled my little pastries with a whipped cream lightened, cooked custard (pastry cream), and added sliced strawberries.  Call it a sophisticated Strawberry Shortcake! 

 Ingredients


For the Pastry Cream...

2 cups/500ml milk
1/2 vanilla bean, split lengthwise, or 1-1/2 teaspoon vanilla extract
1/2 cup/100g sugar
5 large egg yolks
3 tablespoons all purpose flour
3 tablespoons cornstarch
1 cup heavy cream
Strawberries 


For the Pâte A Choux...

1 cup/250 ml water
1 cup/250 ml milk
1 teaspoon salt
1 teaspoon sugar
1-3/4 sticks unsalted butter (200g) cut in pieces
1-2/3 cups/235g all purpose flour
6-7 large eggs
optional: 
2 tablespoons chopped sliced or slivered almonds and 2 tablespoons course sugar mixed together in a small bowl

Preheat oven to 425°
makes 12-24 puffs depending on size.

Note:  Shells may be frozen for up to a month.  Recipe may be cut in half or doubled with out any problem.

1.  For the pastry cream, combine the milk, the vanilla bean and about half the sugar in a large heavy saucepan over medium heat and bring to a boil.  Meanwhile in a mixing bowl, combine the egg yolks and the remaining sugar and whisk vigorously until the yolks are a pale color, about 5 minutes.  Sift the flour and cornstarch into the yolk mixture and blend together thoroughly.

2.  Gradually pour the hot milk into the yolk mixture in a slow stream, mixing gently until blended.  Return the mixture to the saucepan and and bring to a boil over medium heat, stirring constantly with a whisk.  Boil and whisk vigorously for 2 minutes, strain the cream into a mixing bowl, if you are using vanilla extract, add it now, stir to blend.  Pour the custard into a clean bowl and place a piece of plastic wrap directly on to the cream, to prevent the formation of a skin.  Refrigerate for 2 hours until completely cooled.


3.  When the pastry cream has cooled, and your ready to fill your cream puffs, whip the heavy cream in a mixing bowl until stiff peaks form.  Gently fold into the cold pastry cream by hand, using a rubber spatula until well incorporated.

1.  For the pastry, in a large heavy saucepan, combine the water, milk, salt, sugar and butter.  Bring to a boil over medium-high heat stirring to melt the butter. 

2.  Sift the flour onto a piece of parchment paper.  Remove the pan from the heat and add the flour all at once, stir quickly with a wooden spoon to incorporate the flour.
Return the pan to medium heat and stir vigorously with the wooden spoon for 1 minute, until the mixture pulls away from the side of the pan.  

3.  Transfer the mixture to the bowl of an electric mixer.  Using the paddle attachment, add the first 5 eggs, one at a time, beating on medium speed, incorporating the eggs until a nicely smooth dough is achieved.  After the fifth egg, beat the last 2 eggs one at a time using only as much as you need so that when the mixture is lifted with a spoon, a peak stands up, then drops over slightly. 


 4.  While the dough is still warm, scoop the dough onto a parchment lined baking sheet. At this point, you can sprinkle the almonds and sugar mix, lightly over the top of the puffs, (love the added crunch) or leave them plain if you like. 


5.  Bake in the preheated oven for 20-30 minutes or until puffed and golden brown on top.  Remove from pan and cool completely on a wire rack before filling.

 To fill the cream puffs...

Split the puffs gently in half horizontally with a serrated knife.  Place a layer of sliced strawberries on the bottom half of the puff.  Spoon a generous amount of pastry cream over strawberries and lightly set the top half onto the cream.  Dust lightly with confectioners sugar, or swizzle melted chocolate over the top if you like.  Enjoy!

Strawberry Cream Cheese Hand Pies

Yet another cold and rainy day here in Maine today, I'm needing the warmth of the wood stove, or better yet, the oven!  I have fresh strawberries and cream cheese in the fridge, I think some Strawberry Cream Cheese Hand Pies are in order.  A tender light and flaky crust wrapping itself around a not to sweet filling of strawberries and cream cheese, with a hint of lemon.  Oh yeah, this days getting better already!  

 Ingredients

Recipe makes 12  3-1/2" pies

For the strawberry filling...
1 Tablespoon butter
2 cups fresh strawberries , sliced
1 Tablespoon lemon juice
2 Tablespoons sugar
1 Tablespoon all purpose flour,sifted

For the cream cheese filling...
4 ounces cream cheese, room temperature
1/3 cup sugar
1 teaspoon lemon zest
1 large egg yolk

For the crust...
2 cups all purpose flour
2 Tablespoons sugar
1 teaspoon salt
1/2 pound unsalted butter (2 sticks) cold, cut into small cubes
1 large egg
3 Tablespoons cold milk
1 egg for egg wash
coarse sugar, optional 

1.   Prepare the filling first.  Place butter in a medium saucepan on medium, heat until butter starts to brown.  Add strawberries, lemon juice and sugar.  Stir to incorporate and bring to a low simmer.  Cook 5 minutes until strawberries have released their juices.  Remove pan from burner and cool completely.  Add flour and stir to combine.  Spread the mixture into a large 
plate and chill in the refrigerator until ready to use.

  
2.   In a small bowl, whisk cream cheese, sugar, lemon zest and egg yolk until smooth.  Chill in refrigerator until ready to use.


3.   In a bowl of a food processor, combine flour, sugar, and salt.  Pulse several times to mix.  Add cold butter cubes and pulse only until pea sized lumps remain.  In a small bowl beat together, the egg and milk and add to the dry ingredients and pulse until moisture is introduced throughout all of the flour mixture.  Do not over process. Transfer flour mixture to a lightly floured work surface, and gather mixture together until it forms a ball.  Divide evenly in half and shape into a disk.  Wrap each disk in plastic wrap and chill for 30 minutes.












 4.  Remove one disk from the refrigerator and on a well floured surface, roll the dough out to an 11-1/2X11-1/2" square, shy of 1/8" thick.  Using a 3 1/2" square cookie cutter, a pastry wheel or a knife work well also, cut out 9 squares.  Gather together scraps and set aside.  Do the same with the other disk.  Take your leftover scraps and combine into a disk, roll and cut and repeat until you have a total of 24 squares.








In a small bowl, beat remaining egg with 1 Tbs. of water, brush 1/2 of the squares all over with the egg wash.

Spoon about a teaspoon of cream cheese mixture and a teaspoon of the strawberries in the middle of each egg washed square, don't over fill.  Top with the second (unwashed) piece of dough and press all around with your finger, or the tines of a fork.  With a sharp knife poke a few small holes on top to vent steam.  Brush top of each pie with egg wash and if desired, sprinkle with coarse sugar.  Place tarts on a parchment lined baking sheet and chill.


 5.   Heat oven to 375° let the tarts rest in the refrigerator while the oven preheats.  Bake for 20-25 minutes, until a light golden brown on top.  Remove from oven and allow to cool slightly, then remove from pan to a wire rack.  Serve warm or at room temperature.
